Unboxing Atago PAL-COFFEE and Taste Honduras Beans by On the Hill

I bought Atago PAL-COFFEE in order to prepare for my in-depth study of espresso making.  I ordered Decent Espresso Machine and it will arrive in October.

An unboxing video has been taken.

Testing Coffee Beans

Recently, I visited On the Hill and bought La Esperanza Honduras Beans roasted by the coffee shop.

I also took a video buying the beans from On the Hill.

Why Atago PAL-COFFEE?

My model of Atago PAL-COFFEE can only measure TDS% (Total Dissolved Solids%).  The main reasons choosing Atago:-

  • Relatively cheaper, 2k HKD vs 6k HKD for VST Refractometer
  • Smaller than VST
  • Made in Japan, I trust Japanese craft

TDS% and Extraction Yield%

By a simple conversion, TDS% can be converted into Extraction Yield% of the brewing

TDS% x Beverage Mass = Total Dissolved Solid Mass

Total Dissolved Solid Mass / Coffee Dose Mass x 100% = Extraction Yield%

My V60 Brewing and Tasting Test

I have quickly tested out my V60 brewing with 91C temperature, 15g coffee dose, 225g beverage:-

Dripper Brewing Method Grinder Degree Brewing Time TDS% Extraction% Remarks
V60 Plastic James Hoffmann's Ultimate V60 Method Niche Zero 80 2:10 1.06%-1.11% 15.9%-16.65% Taste clear melon note but slightly underextracted
V60 Plastic James Hoffmann's Ultimate V60 Method Niche Zero 60 2:20 1.29%-1.54% 19.5%-23.3% Taste dirty, less clear melon note and slightly bitter
V60 Plastic James Hoffmann's Ultimate V60 Method Niche Zero 70 2:20 1.07%-1.20%    16%-17.9% Taste clear melon note
V60 Ceramic James Hoffmann's Ultimate V60 Method Niche Zero 70 2:05 1.01%-1.13%     15.1%-17.3% Taste clear melon note and little mango
V60 Tetsu Kasuya Tetsu Kasuya's 4 6 Method Niche Zero 70 3:50 1.01%-1.13%     16.1%-17.7% Taste melon note, body is heavier, approaching overextraction

Atago quickly provided a direction for me to finetune my Niche Zero's grind degree.  The extraction % are generally in line with one another.  From the figures and my personal tasting, I think 17% extraction is already the upper limit.  Exceeding this limit, bitterness of the beans will come into taste.

Atago PAL-COFFEE will be my all-time coffee tasting companion.  More impressions may be shared in the blog in the future.

PS:

Niche Zero's standard grind degree range is 0-50.  You may find how to dial extra grind range for Niche Zero in my another blog post @ Niche Zero - 頂級家用 Espresso + 手沖 兩用 磨豆機開箱
